Eggs- Hunting and Eatting




Here are a few egg hunting pictures, because I promised. The girls looked great (at least at the begining of the day) in there Easter dresses. I think that is one of my favorite things about being a mama to little girls, all the fun dresses. Too bad our chuch is not the dress up type, guess they will just have to look cute on random Tuesdays or something. I am pretty sure the best egg hunting is done in pretty dresses.
While we are on the topic of eggs, I want to share another fab recipie for a meatless dinner. I am loving these quick and easy eggs dishes as of late. This one you have to try, it is so fast! You can have dinner on the table in under 30 minuites.
Tomatoe Baked Eggs
1/2 small chopped onion
2 cans of Italian tomatoes (I used ones we canned from last summer and they were sooooo good!)
Garlic to taste (which at our house means A LOT of garlic)
8 eggs
1/2 cup Italian cheese
1 tsp. Italian seasoning
salt and pepper
Preheat oven to 350. Grab your favorite oven proof skillet (mine is cast iron) and cook up you garlic and onion with a dash of oil on the stove until transparent. Toss in both cans of tomatoes and cook until liquid is reduced. Take off of the heat. Make 8 little wells and crack your eggs into them. Sprinkle with salt and pepper and then put cheese on the top. Toss in the oven and cook for 12-15 minutes if you like your eggs a bit runny and 18-20 if you like them firm. Serve with crusty bread and a salad, and if your husband loudly objects to the lack of meat, you could add a side of Italian sausage too.
This would be a good brunch item. It would look really cute if you made individual sizes in little ramekins, but I don't have any. You could make this a Mexican meal by using Tomatoes with green chilies and using cumin instead of Italian seasoning and pepper jack on top, serve it with tortilla and cut up avocado.
After exploring a couple of meatless egg dishes, I am now moving on to bean dishes, with or without a little meat. Consider this your warning not to sit to close to us at MOPS or Church, and don't believe Matt when he blames the baby. The only infant I ever met who could rip them grown-man style was my nephew Ryan, that kid had skills.

But I'm sticking in meatless meals every so often and he's doing fairly well with it. We used to only have meat four times a month way back when. Thanks for the recipe. BTW, my prayer partner bought a book for you, "Mommy and Me, Gluten Free"; I'll bring it up next week.

Working on my Domestic Goddess Badge

I looked at the to-do list I made last week and am happy to say I can cross off almost everything on it. It only took me 2 weeks. I think I either need smaller lists or more time. Happy Birthday Addilyn Joy!

Addilyn, Happy birthday, big girl! I love your laugh, your zest for life, your need to move. I love that you want to be a donut on Halloween and have a rainbow birthday party, your drummer has a beat all it's own and I can't wait to see where it leads you as you grow. The Counter

Matt meets a lot of interesting people in his line of work. Most recently he spent some time in LA with Andy Lichit, producer of "Water World" and "Cable Guy". Apparently, Andy is not only into movies, but food too. He has a restaurant in Park Meadows area called "The Counter". He called the manager here and told him that Matt and I would be coming in and to comp our dinner. So we called our favorite baby sitter (Thanks FAITH!) and went for a great meal sans kiddo's. The Counter is an up-scale design your own burger joint. We ate some fabulous burgers and enjoyed some grown up conversation. Not a bad way to end a weekend.
