New Favorite Gadget


My sister Steph was telling me about packing lunches for her kido's and we were discussing ideas. She was talking about her sandwich maker and I thought, "I gotta get me one of those!". After a $10 investment from Wal-Mart I am now wondering how I ever lived without this thing! It is really fast, super easy to clean and makes the perfect size items! Being GF, i have had to use something other than bread so I have used masa harina dough (1 part masa harina, one part water, roll flat and place in maker) and corn tortillas. Here are some ideas I can't wait to try:

Pigs in a blanket- pancake batter and chopped up sausage in it (cooks in about 4-5 min) Omelets- 2 eggs, 1/2 c cheese and bacon (cook 3 min)
Tuna cakes- 1 can tuna, 2 eggs, 1 c crushed cereal, 1/2 cup chopped onion, salt and pepper (cook 4-5 min)
Hash browns- butter, hash browns or shredded potato, 1/2 c chopped onion salt and pepper (cook 3-4 min)
Corn bread- corn bread mix (follow directions on box)
*we mix in canned corn, chile's and cheese cook (3-4 min)
*add chopped hot dogs for corn dogs, dip in ketchup*
crispy burritos- one tortilla, butter one side put in maker, spread refried beans, shredded cheese, chopped tomato w/chile's and ground hamburger. Butter the other tortilla and place butter side up. (cook 3-4 min)
Pizza- Refrigerator crescent rolls, sauce, cheese and favorite toppings. Or leave out the sauce and just dip!
Cookie Dough- Place a layer of oatmeal dough, top with chocolate and raisins or peanut butter, top with a little more dough and (cook for 5-7 min)
Muffins, cakes and brownies- Just your favorite batter in the fridge and pour as needed. Brownies would be awesome with melted chocolate and marshmallows in the middle. You could make any flavor of muffin you want.
Pocket pies- Use pie crust and canned pie filling.

Think of all the quick, healthy and cheap items you can make! Next time you see me I might have put on a couple of pounds trying some of these things out. Please be kind and pretend not to notice.


UPDATE! For breakfast I made baked oatmeal in the sandwhich maker. Place a scoop of oatmeal mix, a layer of fruit or raisins, and another scoop of oatmeal mix. Dip in yogurt. FANTASTIC! Elie helped...

Oh my gosh you are so creative! We just got our first new appliance in a WHILE - a George Forman grill - and I am looking for new ideas for it... but I had no idea you could put this kind of stuff on it!! I need to pick your brain about this... you are so smart!
PS - I do do the quesadillas though & the kids love them

Kari- I posted what a sandwich maker looks like but I have eaten everything I made so I can't take a picture of it!

Song-Think outside the sandwich, dear friend. The cornbread is soooo good!

Jenny- Please don't try these on George! A sandwich maker is a little different (not a panini press). Check it out when you go to Wal-Mart.

Working on my Domestic Goddess Badge

I looked at the to-do list I made last week and am happy to say I can cross off almost everything on it. It only took me 2 weeks. I think I either need smaller lists or more time. Solo

I was told by my mother when I was a teen that my curfew was midnight because "nothing good happens after midnight". If that is true at 16, I am pretty sure that "nothing good happens before six a.m" is true for my current station in life. Some may argue that it is always true, but not Annabelle. For the last few weeks, the babe has been up before the sun. It isn't exactly the fault of the whole "fall back" time change, but that didn't help matters. Normally this is annoying, but not really my problem as Matt is the one on call as the sun rises. Alas, Matt is in Korea and I am flying solo, desperately missing my morning wing man. Feeling Resolute

I am a list person. I don't actually follow everything I write down, but I do write it down. Sometimes I think it is my weird way of feeling like I have my life under control. Not only do I make lists for myself, I make them for Matt. Yes, I know that is obnoxious so I don't always give him the lists I make for him. Yesterday I tortured my husband by making him sit down and make a list WITH me. I do it every year. You see, Matt is an amazing big picture person, but details kill him. Annually I make him sit down and write goals. We categorize them by finance, work, personal, spiritual, etc. It kills him to have to be specific. I keep the list every year and we read it together. This significantly brightened Matt's mood, to hear all the things we have accomplished this year. Our debt is reduced, relationships have been formed and baby #3 can be totally checked off the goal list. This year I am resolving to blog every day.
