This weeks menu

Friday is supposed to be the day I do all my shopping...and I mean ALL, but this week Matt was gone until mid-day Saturday. I do not take all 3 children into the store, I would rather go hungry. We make do without until I can go by myself because I can either stay on budget or shop with children. I usually make at least 5 stops, sometimes more, and can finish in about 3 hours. Since I don't make the money in this family, I do my best to spend it wisely by shopping sales and using coupons. This week at King Soopers (Kroger) I did very well. I saved 48% and almost $100. Doing this also allows me to buy extras for the food pantry at our church. I also plan the weeks menu according to what is on sale, here are the highlights of this week:

Coconut Shrimp, Sweet potato fries, salad
Pasta with scallops and Bacon, french bread and salad
Bean and sausage soup with corn bread
Baked eggs, asparagus, bread
BBQ Chicken on the grill, potatoes, steamed broccoli

Breakfast and lunches will look a lot like what we usually have. I think I will make up a batch of banana muffins for snacks and might serve toast with cream cheese for breakfast. I am in need of inspiration for creative breakfasts and lunches, what do your kids love?

For breakfast we have been doing a lot of french toast, oatmeal with fruit, bagels with cream cheese, bacon, scrambled eggs (usu. with sauteed peppers), and peanut butter toast.

For lunch today I cut up apple slices and dropped a spoonful of almond butter on their plates and some graham crackers. Lunch voila! This is always a hit. Same thing with hummus & veggies (carrots, cucumbers, peppers). Deli meat, a slice of cheese, and some carb is a good one. Cheese quesadillas - always a hit.

These are my kid's favorites. Good luck!! And way to go on your shopping girl!!!!! I am inspired!!

Working on my Domestic Goddess Badge

I looked at the to-do list I made last week and am happy to say I can cross off almost everything on it. It only took me 2 weeks. I think I either need smaller lists or more time. Here is what I have been up to: -I have made 2 loaves of banana oat bread, 1 batch of blackberry strawberry freezer jam, 1 loaf of gluten free bread. -From 12 juiced grapefruit I made grapefruit curd and a pan of grapefruit bars. -My garden is almost completely done, including a upgrade in size. I am growing tomatoes, onions, peppers, potatoes , cabbage, broccoli, cauliflower , herbs, lettuce, spinach , green beans, snap peas, cucumbers, and kohlrabi. -I hung herbs to dry -I have folded massive amounts of laundry...with more yet to do. All washed with my homemade laundry soap. -I recovered the "green monster" which is another post entirely. -I added a sitting area in my bedroom, where I am currently sitting, so that my laptop has a home other than the kitchen table. - I got a new dining room table a...

Blogging

So I have lost the love of blogging. I have always believed it is a narcissistic pass time, yet enjoy it anyway. I have found I easily spend entirely too much time tied to my computer. By the time I check Facebook , e-mail, friends blogs, etc I can easily waste an hour, if not two, of time. A friend of mine just blogged about the same thing. Yes, I get the irony of a blog post about not blog posting, but alas, here it is: I just read a good friends blog about my blog. A great leader here in Boulder, Kevin Colon wrote this: “Hugh moved to Denver to do a training deal for an organization and he ended up starting a church. His blogging is not incredibly frequent but when he does blog….it’s good!” Now, while I’m humbled that a man like Kevin would even want to read my blog, I figured it was a good time to state once and for all why I only post once or twice a month. Simply this……..”I prefer to spend my time with people.” I’ ve always wondered how people have time to read blogs, let alo...

Life

I haven't really updated on what the Crocker fam has been up to lately. Maybe because my life is just not that exciting? I do have some cute new pictures. So, lets see, we went up into the mountains (well, Evergreen) and went leaf peeping, walked around the lake and ate at Beau Joes (they have gf pizza). We went on a nice bike ride with the girls. Matt and I had our 9 year anniversary , he was soooo sweet and had flowers delivered and chocolates from See's. We are going to celebrate Grandma and Grandpa's 60 th anniversary this Friday. That about covers it! Here are some pictures!
